Mid-Summer Menu Preview with The Iberian Pig

The Iberian Pig hosted a mid-summer menu preview this afternoon, which also happens to be Chef Jay Swift’s debut at The Pig. Chef Jay, formerly of 4th & Swift and The Noble Fin, took over the helm in May. I’ve been in to The Pig before and enjoyed my experiences in the past, but this menu preview blew me away. The flavors were more nuanced and balanced than some of the previous dishes I’ve had there and are perfectly seasoned for summer.

The highlight of the tasting menu was definitely the scallop dish. The sweet corn purée and scallops seemed to be a match made in heaven but the fresh flavors of the succotash brought a nice crisp balance to the plate. But then there’s also the garbanzo beans. Oh! The croquetas! I’m going to stop while I’m ahead.

The new menu changes take effect tomorrow, Monday July 23rd. Make sure you get yourself in to try it out.

Serrano Ham and Mahon Croquetas with Membrillo Ketchup
Baby Beets and Strawberries with hazelnuts, goat, cheese, chives, and white balsamic
Scallop with chili-sweet corn purée, succotash, toasted peanuts, and chili oil
Heirloom Tomato and Bread Salad with cow’s milk feta cheese, shaved shishito peppers, Herbs de Provence, spiced sherry vinaigrette
Crispy Branzino with samfaina, olive oil poached sungolds, harissa
Cazuela of Garbanzos and Spinach Pimenton Dulce with white sofrito, crushed olives, and citrus
Lamb Chops with couscous, pomegranate, mint raita
